KOVAKKAI ROAST

 



Ingredients

  1. Kovakkai- 250 gms
  2. Turmeric powder – 1 tsp
  3. Chilly powder – 1 tbsp
  4. Sambar powder/Rasam powder -  tbsp
  5. Tamarind paste -  2 tsp
  6. Jaggery -1 tbsp
  7. Salt to taste
  8. Mustard seeds –  1tsp
  9. Dry red-chilly – 2 (broken)
  10. Curry leaves - a few
  11. Coconut oil – 3 tbsp

Method

Heat a pan, add 3 tbsp oil; when the oil becomes hot add mustard, red-chilly and curry leaves, then add chopped kovakkai and roast well for 5 mins. Now add about ½ cup of water into the roasted kovakkai.

Allow it to cook slowly for10-15 mins, then add turmeric powder and salt and mix well. After 10 mins when all the water is evaporated, add tamarind paste and 25 gms jaggery, again mix until they are combined well.

To the above add sambar/rasam powder, mix and let it cook for another10 mins till the roasted and cooked mix turn into reddish brown colour.

Now your Kovakkai roast is ready to serve with curd rice.
