SWEET MANGO PICKLE


 Ingredients

  1. Raw mango (grated) - 3 cups
  2. Jaggery – 2 cups
  3. Salt to taste
  4. Chilly powder – 3 tbsp
  5. Turmeric powder – ¼ tsp
  6. Fenugreek powder - /4 tsp
  7. Asafoiteda – ¼ tsp
  8. Roasted jeera - 1 tbsp.

Method

In a saucepan, add all ingredients, mix well and, over a gentle heat allow to cook until a desirable thickness is attained. Withdraw from the heat source and permit to cool. Then fill the prepared sweet mango pickle into a clear and dry glass jar. Refrigerate and consume within a period of two months. It pairs exquisitely with aloo paratha, roti, rice, and the like.
