SWEET MANGO PICKLE
Ingredients
- Raw mango (grated) - 3 cups
- Jaggery – 2 cups
- Salt to taste
- Chilly powder – 3 tbsp
- Turmeric powder – ¼ tsp
- Fenugreek powder - /4 tsp
- Asafoiteda – ¼ tsp
- Roasted jeera - 1 tbsp.
Method
In a saucepan, add all ingredients, mix well and, over a gentle heat allow to cook until a desirable thickness is attained. Withdraw from the heat
source and permit to cool. Then fill the prepared sweet mango pickle into a
clear and dry glass jar. Refrigerate and consume within a period of two months.
It pairs exquisitely with aloo paratha, roti, rice, and the like.
