BABY POTATO ROAST

 Ingredients

  1. Baby potato (boiled and peeled) – ½ kg /500 gm
  2. Grated coconut – 1cup
  3. Onion -2
  4. Ginger – 1’’ piece
  5. Garlic – 3 flakes
  6. Chilly powder – 2 tbsp
  7. Coriander powder -2 tsp
  8. Turmeric powder -1/2 tsp
  9. Garam masala powder – ½ tsp
  10. Pepper – 1tsp
  11. Fennel – 1tsp
  12. Salt
  13. Cinnamon cloves – 1 each
  14. Cinnamon 1 inch piece
  15. Bay leaves – 1
  16. Coconut oil – as needed
  17. Curry leaves

Method

Heat 3 tbsp oil in a pan, fry the boiled potatoes for 5 mts and keep aside. Grind coarsely items 2-15, then heat 2 tbsp oil in the same pan and sauté the ground ingredients for a few mts. Add the curry leaves, fried potatoes, and roast for ten more minutes, or until golden brown. SERVE HOT WITH CHAPPTHI
