VENDAKKA MAPPAS

 


Ingredients

1.     Vendakka (Ladies finger) -500gms

2.     Oil – 3 tbsp

3.     Onion – 3 finely chopped

4.     Green chilly - 3

5.     Ginger – 1small piece

6.     Garlic – 4 nos

7.     Curry leaves- a few

8.     Chilly powder – 1tbsp

9.     Turmeric powder- ½ tsp

10.  Coriander powder -1tbsp.

11.  Garam masala -1tsp

12.  Salt as needed

13.  Coconut milk – 2 cups

14.  Tomato – 2 chopped

Method

·       Wash the vendakka and cut into small pieces.

·       Heat oil in a pan and half fry the vendakka pieces and keep aside.

·       In the same oil, add finely chopped onion, ginger, green chilly and garlic, saute until light brown.

·       Add the powders and salt, sprinkle some water and fry for a few mins till the raw smell goes.

·       Add chopped tomatoes, saute, then add fried vendakka pieces and coconut milk, cook in low flame for a few more mins.

·       Finally add a few curry leaves and turn off the stove.

·       SERVE WITH RICE.
