ONION PAKODA/ ULLI BAJJI
Ingredients
- Gram flour /besan – 1 cup
- Rice flour – 1/2 cup
- Turmeric powder -1/2 tsp
- Butter -1 tbsp.
- Onion thinly chopped- 1 cup
- Green chilly- 4 chopped
- Ginger Garlic paste - 1 tsp.
- Jeera - 1tsp
- Coriander leaves chopped –a handful
- Curry leaves – 2 String
- Salt as needed
- Baking Soda – 2 pinch
- Oil for frying
Method
- In a mixing bowl add chopped onion, green chilly, ginger garlic paste, salt, turmeric powder, chopped coriander leaves, jeera, baking soda and butter. Mix everything well, cover and keep the mixture aside to marinate for 20 mints. There is no need to add water while adding gram flour and rice flour into the mix- since the onions will release its juice when mixed with salt.
- However, to make a thick batter, add required quantity of water, stir the mixture very well with spoon or with your hands without any lumps. The batter is ready to be fried.
- Heat oil in a frying pan, if it is hot enough, take small portions form the batter and gently drop them into the oil. Fry on a medium heat stirring occasionally for even frying. When the pakoda turns golden brown and crispy, remove them to a kitchen tissue. Before frying the next batch, ensure that the oil is not very hot. Sprinkle chat masala, serve with tea.
